     Beef Barley Soup

Ingredients
1lb beef stew meat
1 tsp salt
1 tsp pepper
1/2 cup flour
2 tbsp olive oil
1 lg onion, chopped
1 carrot, chopped
2 celery stalks, chopped
3 cloves garlic, minced
 
1tsp oregano
3 tbsp tomato paste
4 cups beef broth
3 cups water
3/4 cup barley

Instructions
Season beef with s/p. Put in plastic ziploc w/flour. Shake to coat. Heat onion in soup pot. Add beef and brown. Remove meat.
Add carrots, celery and onion to same pot. Cook until soft. Add garlic, oregano and tomato paste. Add meat back then broth and water. Season with s/p.
Bring to boil then turn to medium and cook 45 minutes. Add barley and cook another 30 minutes. Stir occasionally.
