How to Make Raclette

Ingredients

1/3 pound raclette cheese per person
-
1/8 inch slices, 3-4 inches long, 3-4 in wide

8-10 boiled new potatoes per person

cornichons, pickled onions

mushrooms, apples limited only by your imagination

Instructions
Use your raclette machine, however, if you don't have one- Preheat oven to 500 for 15 minutes. Heat 10 inch oven-proof plates in oven for 3 to 5 minutes. Plates should be hot for successful raclette.
When ready to serve, remove plates from oven, arrange 2 slices of cheese on each plate. Place the plates on the floor of the oven or on the first rack slot above the floor of the oven. In about 2-4 minutes the cheese should become bubbly.
Remove plates from oven. Place 2-3 potatoes on the cheese accompanied with cornichons, onions, etc. - Careful with the hot plates. Cheese lovers can easily consume 3 or 4 plates so be prepared with enough cheese!
