     Feta, Sweet Potato and Spinach Quiche -Crustless

Ingredients
2 tsp olive oil
1 red onion, cut into wedges
1 garlic clove
600 g sweet potatos, peeled and chopped into 1.5 cm cubes
2 1/2 cups of spinach leaves
1 cup milk
6 eggs
200 grams of crumbed feta
1/2 tsp nutmeg
 
fresh ground pepper
1/4 cup grated parmesan cheese
2 Tbs pine nuts

Instructions
Heat oven to 180 degrees. Grease 9- inch dish and cover with breadcrumbs.
Heat oil in a large non-stick frying pan, add onion, garlic and cook for 1 minute. Add sweet potato and cook over moderate heat, stirring occasionally until golden brown (about ten minutes).
Add spinach and cook, stirring until wilted. Cool. Add feta cheese, stir to combine and lay in baking dish.
Beat the 6 eggs in large jug with milk, nutmeg and pepper and pour over vegetables in dish. Sprinkle with parmesan and pine nuts. Bake in moderate oven for 35-40 minutes until puffed and golden.
Serving Suggestions
Serve with salad and/or crunchy bread
