1 lb. raw boneless, skinless chicken breast, cut into bite-sized pieces
2 T. chopped fresh basil
3/4 C. shredded part-skim mozzarella cheese
Instructions
Preheat oven to 350. Spray 8x8 baking pan with nonstick spray. In
medium bowl, combine tomatoes with 1 t. each of garlic powder,
onion powder and Italian Seasoning. Mix well.
In another medium bowl, combine breadcrumbs with 1 T. Parm, 1/4
t. garlic powder, 1/4 t. onion powder and 1/4 t. each salt and
pepper. Mix well.
Evenly distribute chicken pieces into the baking pan. Sprinkle with
remaining 1/2 t. garlic powder and 1/2 t. onion powder and 1/4 t.
each salt and pepper.
Evenly layer over chicken- basil, seasoned tomatoes, 1/2 C.
mozzarella and remaining 2 T. Parm. Sprinkle with seasoned
breadcrumbs and remaining 1/4 C. mozzarella. Bake 30 minutes,
until hot and bubbly.
