1 can Ro-Tel diced tomatoes and green chiles (about 10 oz)
1/2 cup mild taco sauce (usually use Pace Picante Sauce)
1 envelope taco seasoning mix
12 oz of tortilla chips, or whatever you have leftover
2 cups shredded Mexican blend shredded cheese
Instructions
Preheat oven to 375 degrees. Grease a 11x7 baking
dish. Cook rice with water. Set aside.
Cook ground beef with onion, until brown and
crumbled; drain. Stir in rice, seasoning mix, Ro-
tel and taco sauce. Heat until warmed through.
Layer half of the broken chips on bottom of
baking dish. Cover with half of the meat
mixture; sprinkle with half of the shredded
cheese. Repeat with remaining ingredients.
Cover and bake for 25 minutes or until cheese
is melted and bubbly. Remove cover and broil
an additional five minutes to make cheese
golden brown. Remove, allow to cool before
serving.
