     Chicken Ala King

Ingredients
1 C Butter melted
1 C Flour to thicken
2 L Chicken Broth
4 C sliced Mushrooms drained
1 C Celery
1 C Onion
1 C Carrots
3 cans Mushroom Soup (no water) or substitute one of the cans for Cream of Chicken Soup
1 to 2 C Peppers red, yellow or orange
 
2 to 3 C Half and Half
6 to 8 Cups Chicken cooked and chopped

Instructions
Boil for 1 minute the butter, flour and chicken broth till thick. Cut up the onions, celery, carrots, peppers and mushrooms to tiny pieces. Quarter the mushroom slices as it looks better if they are very small. Add all the ingredients to the chicken broth mixture and stir. Cook for about 20 minutes to allow the favours to blend and taste to see if it is ok.
Serve over rice or pastry shells. The pastry shells come already made and just have to be cooked. This recipe will fill an ice cream pail.
3.5 times the recipe is enough for 50 people. This equals one cup of Chicken Ala King per person. A Costco roaster holds 52 cups of the Ala King. You will need another pot to hold the remaining amount. 4 times the recipe requires 1 1/2 roasters full. Plan on 2 pastry shells per person because some people eat 4. The shells are Tenderflake frozen dough shells
Serving Suggestions
Serve over pastry shells or rice. Serve a salad with the Chicken Ala King
