     Mexican Rice

Ingredients
3 T Olive Oil
1 C Rice
1 t. Minced Garlic
1/2 t. Salt
1/2 t. Cumin
1/2 C Tomato Sauce
1 14 oz Can Chicken Broth
3 T Cilantro chopped (Don't do more)
 

Instructions
Heat oil in sauce pan. Add uncooked rice and stir until rice begins to lightly brown. Add the garlic, salt and cumin and stir until golden brown. Add the rest of the ingredients and bring to a boil. Cover, reduce temperature to low and simmer for 20 minutes. Use all the liquid indicated in the recipe
If using a Rice Cooker leave out the olive oil. l
Serving Suggestions
Serve with Honey Lime Enchiladas
