Ingredients
1 1/2 lbs Pork Stew Meat
1 - 14 1/2 oz can Diced tomatoes with herbs
2 1/2 cups of Beef or Chicken Broth
1 lb package frozen Stew Vegetables (potatoes, carrots, celery)
2 TBS. Flour
1/4 - 1/2 tsp powdered garclic
3 Bay Leaves
Salt & Pepper to taste.
2 TBS. Olive Oil
 

Instructions
Brown pork in pan with Olive Oil. When browned, stir in the flour coating the pork.
Put the pork and all remaining ingredients in the Crock Pot, expect the vegetables. Cook on high for 4 hours or until pork is tender.
When the pork is tender, turn to low, add the frozen vegetables and cook for about 1/2 hour or until tender. Remove Bay Leaves.
This is a dish that one could easily substitute raw veggies and experiment with herbs and spices.
