     Best Ever Rolls

Ingredients
1 1/4 cup milk
1/4 cup instant mashed potatoes
2/3 cup margarine or vegetable oil
1/2 cup sugar
1 1/2 teaspoon salt
1-2 packages yeast
2 eggs well beaten
6-7 cups flour
 

Instructions
Bring 3/4 cup water and 1/4 cup milk to a boil and pour in to a large mixing bowl. Add potato and mix until blended. Heat remaining milk and pour over potato, add margarine, sugar and salt. Cool to lukewarm. Add yeast which has been softened in 1/2 cup lukewarm water. Add eggs and 3 cups flour. Beat with spoon or mixer. Mix until smooth and light.
Stir in enough more flour by hand to make a soft dough. Knead. Put in greased bowl and raise. Shape as usual or put in fridge with plastic wrap on top and bake and rise as needed.
If room is not warm or draft free, warm oven and turn off heat while preparing dough. Let rise in oven covered by a greased sheet of saran wrap or wet dish towel.
