     Crockpot Cashew Chicken

Ingredients
3 Livesmart Chicken Breasts from Schwans (Raw and Cut in Cubes)
2 Cups Broccoli (Chopped)
1 Cup Carrots (Chopped)
1/2 Roasted Cashews (Unsalted)
4 Tbsp Rice Wine Vinegar
3 Tbsp Ketchup
1 Tbsp Brown Sugar
1 Tbsp Powdered Ginger
1/4 tsp Red Pepper Flakes
 
1 tsp Salt
1 tsp Pepper
1 cup Chicken Broth
1 tsp Garlic Powder
3/4 Cup Brown Rice

Instructions
Spray Crockpot with Cooking Spray to prevent sticking.
Dice raw chicken and place in bottom of Crockpot. Add all other ingredients to Crockpot (except brown rice)
Cook on low for 6-10 hours
About 30 minutes prior to eating, cook rice. For 3/4 cup rice, use 1.5 cups water. Bring water to boil, then turn to low and cover. Let simmer for about 30 minutes, until all water is absorbed
