in a large pot, saute onions, carrots, and celery in a little butter or olive oil.
add chicken broth and water. bring to a boil. drop in chicken breasts and simmer until meat falls apart. remove chicken and chop or shred. return chicken to pot, and bring back up to a boil.
cut each raw biscuit into 4 pieces. drop into the soup one piece at a time and stir gently. cook for 10 minutes or until dumplings are done. add salt and pepper as desired.
