     Cafe Rio Pulled Pork

Ingredients
Pork Roast 2.9 Kg
Salt and Pepper to taste
1 C Salsa
3/4 Brown Sugar
1 C BBQ Sauce
Soft Taco Shells red or green
Rice
Black Beans drained, Lettuce, Tomatoes chopped, Cheese grated
 
MAYO SAUCE
1 C Milk
1 C Mayo
1 pkg Ranch Dressing
1 Garlic Clove
1 t. Lime Juice
Cilantro chopped
4 T Green Chilli
Tabasco Sauce dash

Instructions
Cut the pork roast in half or large chunks. Salt and pepper the roast. You may have to salt and pepper more when it is all done to get the taste you want.
Mix the salsa, sugar and BBQ sauce and pour over the meat and cook in the crockpot on high for 8 hours. When the meat is done take a fork and shred the meat and mix it well into the sauce.
MAYO SAUCE, Mix all the mayo sauce ingredients together and put in a blender to puree. Keep in the fridge until needed. Lettuce, tomatoes, black beans and cheese are served in their separate bowls. The taco shells can be made into bowls by following the Baked Taco Shell Bowl recipe.
3kg of meat will feed about 17 people. Triple the salsa sauce. There is room in the crock pot for triple sauce and 3 kg meat. 8 hours is plenty of time to cook the meat. Triple the mayo sauce if feeding more that 12.
Serving Suggestions
The lettuce, cheese, tomatoes, black beans, rice and meat all go inside the taco bowls. The Mayo Sauce is drizzled on top.
