Preheat oven to 350 degrees. Mix the sugar, oil and eggs together. Add the flour, cinnamon,
baking soda, vanilla salt and nutmeg together. Stir till mixed. Add the carrots and nuts and stir
in till mixed. Pour in a greased and floured 9 x 3 pan and bake for 40 to 45 minutes or until the
middle springs back when touched.
