     Carrot Cake

1 1/2 C Sugar
1 C Oil
3 Eggs
2 C Flour
1 1/2 t. Cinnamon
1 t. Baking Soda
1 t. Vanilla
1/2 t. Salt
1/4 t. Nutmeg
3 C Carrots grated (5 carrots)
1 C nuts chopped
Cream Cheese Frosting

Preheat oven to 350 degrees. Mix the sugar, oil and eggs together. Add the flour, cinnamon, baking soda, vanilla salt and nutmeg together. Stir till mixed. Add the carrots and nuts and stir in till mixed. Pour in a greased and floured 9 x 3 pan and bake for 40 to 45 minutes or until the middle springs back when touched.
When the cake is cooled spread the cream cheese frosting on top. use the Cream cheese frosting recipe found in the cinnamon roll recipe.
