     Bean Salsa

Ingredients
1 (15 oz) Can of each, drained, Black Beans, Pinto Beans, Black Eyed Beans and Corn
2 C Peppers chopped (variety of red, yellow and orange)
1 Jalapeno Pepper finely diced, take seeds out
1/2 Red Onion finely chopped
1/2 C Celery diced
1 t. Garlic minced
1 t. Salt
1 t. Pepper
1/4 to 1/2 C Cilantro chopped
 
MARINATE
1/2 C Olive Oil
1/2 C Sugar
1/2 C Apple Cider Vinegar
1 T Lime Juice

Instructions
Mix all the Salsa ingredients together. Mix in a separate bowl all the marinate together and pour the marinate over the salsa. Toss to coat. Refrigerate. Stays good in the fridge for two days and then the vegetables start to loose their color.
Serving Suggestions
Serve with crackers that are crisp but don't break when scooping
