     Pan Seared Filet Mignon with Garlic and Herb butte

Ingredients
4 10oz thick tenderloin beef filets
2 tbl extra virgin olive oil
2 tbl butter
salt and pepper
Garlic and Herb butter
1/2 stick butter
1 tbl chopped rosemary and chopped tarragon
1/2 tbl minced garlic
 

Instructions
Butter. Soften the butter in a microwave bowl. Stir in herbs and garlic and fully mix. spoon the butter onto tin foil doing your best to reshape it to resemble a stick of butter. Place in refrigerator for about 10 minutes and remove 5 minutes before adding to filet
Steaks- Preheat oven to 415. Remove steak from fridge 30 minutes before cooking. Season both sides of steak generously with salt and pepper.
Add olive oil and plain butter to a oven safe cast iron skillet.Turn up high and allow the skillet to become scorching hot first. Place the fillets face down and sear undisturbed for 2 minutes. Flip and sear 2 more minutes.
Transfer your skillet directly to the oven and finish cooking. 4-5 minutes for rare 5-6 medium rare 6-7 min medium. Remove steaks from skillet and set on a plate. Lightly cover with foil and let sit for 5 min. Top with a slice of garlic and herb butter
