     Frog Eye Salad

Ingredients
16oz package Acini de Pepe noodles
1 cup sugar
2 1/2 tsp salt
3 eggs beaten
3 quarts water
2 cans mandarin oranges, drained
1 can crushed pineapple
1 cup mini marshmallows
2 T flour
 
1 3/4 cup pinneapple juice
1 T lemon juice
1 T oil
2 cans pineapple tidbits, drained
9 oz Cool Whip
1 cup coconut (optional)

Instructions
Mix sugar, flour and salt in saucepan. Sir in eggs and pineapple juice. Cook until thick. Add lemon juice. Set aside.
Cook noodles in boiling water, 10-12 minutes. Drain. Rinse again and cool to room temperature. Pour over in the same sauce and mix lightly.
Refrigerate overnight in airtight container. Add fruit and Cool Whip.
