     Irish Lamb Stew

Ingredients
1 and 1/2 lbs thickly sliced bacon, diced
6 lbs lamb shoulder, cubed in 2 inch pieces
1/2 t. salt
1/2 t. black pepper
1/2 cup all-purpose flour
3 cloves garlic, minced
2 large onions, diced
1/2 cup water
4 cups beef stock (or 1 bottle Guinness and remainder beef stock)
 
2 t. white suga
4 cups diced carrots
3 potatoes, diced
1 t. thyme
2 bay leaves

Instructions
Onions, potatoes and carrots on the bottom of the crock pot with lamb and other ingredients on top. Crock pot for 10 hours on low...thicken with the flour as necessary.
