     French Onion Soup Gratinee

Ingredients
1/3cup butter
1/2 T salt
3 large red onions, thinly sliced
3 large sweet onions, thinly sliced
6 cups chicken broth (water with oxo)
6 cups beef broth (water with oxo)
3/4 cup apple juice
1 T Worcestershire sauce
2 sprigs fresh parsley
 
1 or 2 sprig fresh thyme
1 or 2 bay leaves
1 T balsamic vinegar (optional)
salt and pepper to taste
6 thick slices French bread
grated swiss cheese
grated mozerella cheese
paprika

Instructions
Melt butter in a large pot over medium-high heat. Stir in salt, red onions and sweet onions. Cook about 20-35 minutes, stirring frequently, until onions are caramelized and almost syrupy. Add chicken broth, beef broth, apple juice, and Worcestershire sauce to pot. Bundle the parsley, thyme, and bay leaves in cheese cloth and tie with twine. Add to pot. Simmer over medium heat for 20 minutes, stirring occasionally.
Meanwhile prepare the bread. Preheat the oven broiler. Arrange bread slices on baking sheet and broil 2-3 minutes per side until nicely browned but not burnt. Remove from oven; do not turn off broiler.
Fill oven safe bowls with hot soup. Place the bowls on a baking sheet 2 at a time. Quickly top the bowls with a slice of toasted bread and a mix of grated Swiss and mozzarella cheese. Place back in the broiler about 2 or 3 minutes until bubbly and golden. Remove from oven and serve immediately.
This soup is good with the balsamic and Worcestershire but it doesn't need it and Tyler prefers it without.
Serving Suggestions
Leftover soup can be enjoyed served with croutons and grated parmesan.
