Do not peel zucchini. cut in half across the middle, then each half
quartered lengthwise . Preheat oven to 450 deg. Place rack in top
spot of the oven.
Place the zucchini and garlic in a bowl and top with oil. Spread
zucchini onto a foil lined or roasting pan, skin side down. Sprinkle
with 1/4 to 1/2 tsp. salt.
Roast zucchini about 15 minutes until turning brown (check after
about 7 minutes). Remove from oven and mix with herbs and serve.
