     Thai Coconut Peanut Chicken

Ingredients
Sauce-
1 cup peanut butter
13.5oz can light coconut milk
1/2 cup chicken broth
2 tbsp soy sauce
2 tbsp brown sugar
2 tsp minced garlic
2 tsp ground cumin
2 tsp curry powder
 
1/8 tsp cayanne pepper
salt and pepper
12oz pasta
Chicken-
1-2 tbsp sesame oil
16oz chicken breast cut up small
1 bunch green onions cut up
1 cup shredded carrots
juice of lime

Instructions
Cook pasta according to directions. For sauce- heat coconut milk, peanut butter and broth in saucepan, stirring constantly - do not let it boil. Add remaining ingredients, stirring until it thickens.
Chicken - heat sesame oil in pan and stir fry chicken until almost cooked through. While cooking stir in some lime juice to add moisture. Stir in scallions and carrots and stir fry until veggies are tender. Add more lime juice if needed.
Pour some peanut sauce in with chicken. Pour chicken over cooked pasta and mix with remaining peanut sauce. Yum.
