     dairy free creamy tomato soup

Ingredients
1 onion, chopped
2 carrots, chopped
3 cloves garlic, chopped
evoo or ghee
28 oz can diced tomatoes
28 oz can tomato puree
3/4 cup sherry
1/2 cup fresh basil
1/2 cup soaked macadamia nuts
 
salt and pepper

Instructions
saute onions, carrot, and garlic in ghee. add tomatoes and puree. simmer for a while. add sherry.
drain and rinse macadamia nuts and puree in food processor. add water as necessary to make a cream. add to soup. add basil.
cool soup a bit then puree in blender then reheat. add salt and pepper to taste.
