     Fruit Breakfast Cake

Ingredients
4 c Fruit
1 c Water
2 T Lemon Juice
1 1/4 c Sugar
1/3 c Cornstarch
3 c Flour
1 c Sugar
1 T Baking Powder
1 tsp Salt
 
1 tsp Cinnamon
1/4 tsp ground mace
1 c Butter
2 Eggs
1 c Milk
1 tsp vanilla
1/2 Sugar
1/2 c Flour
1/4 c Butter

Instructions
Combine fruit and water in a pan and simmer 5 mins. Stir in lemon juice. Stir in sugar/ cornstarch mixture. Stir until thick and bubbly. Combine dry ingredients in a separate bowl. cut in butter. Combine eggs, milk, vanilla and add to dry mix. Pour 1/2 batter in 9x13 pan. Pour fruit over batter. Top with the rest of the batter, covering fruit completely. Create crumble topping- combine flour sugar, cut in butter. Sprinkle over top. Bake 350 for 45-50 mins.
