     Brown Rice Cakes with Broccoli and Cheddar

1 T. butter
3/4 c. chopped yellow onion
4 garlic cloves, chopped
3/4 c. unsalted vegetable stock (Swanson)
12 oz. fresh broccoli florets, cut into 1/2-inch pieces
1 (8.8-oz.) pkg precooked brown rice (Uncle Ben's)
1/4 c. whole-wheat panko
1 T. grainy mustard
1/2 tsp. black pepper
3/8 tsp. salt
3 oz. shredded sharp cheddar cheese, divided (about 3/4 c.)
2 large eggs, lightly beaten
Sliced green onions (optional)

Preheat oven to 450. Coat baking sheet with cooking spray (or use baking sheets).
Melt butter in large skillet over medium-high. Add onion and garlic; saute 4 mins. Add stock and broccoli. Bring to a boil; cook 3 mins.
Heat rice according to package directions. Combine broccoli mixture, rice, panko, mustard, pepper, salt and 1/2 c. cheese in large bowl. Stir in eggs. Divide and shape mixture into 8 (2.5-inch) patties.
Arrange patties on pan; coat with cooking spray. Bake at 450 for 15 mins. Top with remaining 1/4 c. cheese and bake 4 more mins. or until cheese melts. Garnish with green onions. Serving size = 2 cakes
