     Roast Lamb with Orzo and Spinach

Ingredients
1 T chopped garlic
2 T chopped rosemary
1 T grated lemon rind
1/4 c olive oil
1 T cracked black pepper
Salt to taste
Mix together and rub on the roast and let rest overnight.
5 lb lamb roast
Sauce
 
1 c red wine
1 T balsamic vinegar
2 c beef stock
2 T redcurrant jelly

Instructions
Preheat oven to 450. Place lamb on rack in a roasting pan. Roast for 30 min then turn heat down to 350 and bake bating another 45 min. Until juices run clear.
Make sauce while lamb is cooking. Bring wine and balsamic vinegar to a boil in a pot over high heat. Boil for 10 min or until wine has been reduced to a glaze. Add in beef broth and boil till reduced by half. Reduce heat and stir in red currant jelly till melted in.
Made this with a lamb roast first. Was good. Re heated the lamb the next night and served with the jus. Was great. Saved the left over jus and deglazed a frying pan that had been used to cook venison steak and a plethora of onions. Was delish. Love this jus
