     Kicked Up Sweet Potato Fries

Ingredients
2 to 3 medium sweet potatoes (wash them if you like eating the peel)
2 tbsp olive oil
1 tbsp cumin
1 tsp cinnamon
Sprinkle of pepper, optional
 

Instructions
Preheat oven to 425 degrees. Cut the sweet potatoes into french fries or wedges Toss potatoes with oil first, then add cumin, cinnamon, & pepper (optional) in a bowl until well coated On a baking pan line it with parchment paper or foil. Spread coated sweet potatoes on the baking pan Roast potatoes until lightly browned and tender. Approximately 15 - 20 minutes
I love the natural sweetness and flavor of sweet potatoes so I was looking for a low fat version of sweet potato fries. While looking for a recipe I found one I like but again I wanted to preserve its natural sweetness so I opted to remove the sugar from the recipe and add a little bit of cumin (got this idea from another recipe) and added a little bit of pepper for heat. This could be eaten as a snack or paired with your favorite sandwich.
