     Baked Eggs in Mushrooms with Tomatoes and Feta

Ingredients
2 portobello mushrooms
diced tomatoes
feta cheese
2 eggs
salt and pepper
spinach
 

Instructions
Place the mushrooms on a baking tray. Fill with the diced tomatoes, feta cheese and top with 1 egg. Season with salt and pepper. Place in the oven until egg is cooked.
Serving Suggestions
Serve on bed of spinach.
