3 green plaintains,peeled and cut into 1 in. thick diagonal slices
10-12 inch frying pan or 2-3 quart saucepan
heat until the oil is very hot but not smoking, about 375 degrees
carefully put plaintains into the oil and fry, stiring occasionally, until golden brown. When paintains are cool enough to handle, place between 2 pieces of wax paper, and with a rolling pin, flatten to thickness.
Return the plaintains to the oil and fry until dark brown for about 2 to 3 minutes. Serve hot
