     Ground Beef Meatloaf Picante

Ingredients
1 pound lean ground beef
2/3 cup picante sauce, divided
1/3 cup quick-cooking oats
1 egg white
1/8 teaspoon salt
1/4 teaspoon black pepper
 

Instructions
1. Heat oven to 350°F. Coat a baking rack and pan with cooking spray. 2. In a medium bowl, combine ground beef with 1/3 cup picante sauce, oats, egg white, salt, and pepper. Mix until blended. 3. Shape meat into an oval about 5 inches wide by 7 inches long and 2 inches thick. Place meat loaf on rack and spoon remaining picante sauce evenly over the top. 4. Bake 50 minutes or until no longer pink in center. Remove from oven and let stand 5 minutes for easier slicing. Cut into 8 slices.
