Sift flour together with sugar, salt, and baking powder. Beat eggs and add milk. Combine with
dry ingredients, mixing until smooth. Add melted shortening. Cook on a hot griddle.
This fed the large family on the no meat Fridays that Catholics observe during Lent, and at one
time observed every Friday year round.
