     Fluffy Minute Tapioca

Ingredients
3 Tablespoons Minute Tapioca
1/8 Teaspoon Salt
5 Tablespoons Sugar
2 cups Milk
1 Egg, separated; set aside yolk and white
3/4 Teaspoon Vanilla Extract
 

Instructions
In a heavy saucepan, mix tapioca, salt, milk, egg yolk, and 3 tablespoons sugar. Let stand for 5 minutes.
Beat egg white until foamy. Gradually beat in 2 tablespoons sugar, and continue beating to form soft peaks. Set aside.
Stirring constantly, cook tapioca mixture over medium heat, bringing it to a full boil for 6 - 8 minuets. Gradually add the beaten egg white, stirring vigorously to blend. Stir in the vanilla extract.
Cool 20 minutes, then stir. NOTE- Increase quantities by 4 times to make a large batch, the size that Mary Lennon would cook for her family.
Serving Suggestions
Serve warm or chilled. Even a large batch was eaten up within a couple of days.
