     German Potato Salad (Marlyn Lennon)

Ingredients
12 Medium Potatoes, cooked and sliced
3 Eggs, hard-boiled, peeled, sliced
1 Medium Onion, sliced
DRESSING-
8 Slices Bacon, fried crisp, broken into bits (save drippings)
2 - 3 Tablespoons Flour
1 Cup Vinegar
1 Cup Water
 
1 1/4 Cups Sugar

Instructions
Dressing- In a saucepan, stir flour into bacon drippings to make a roux. Add vinegar, water, and sugar. Cook until thickened. Set aside.
Mix sliced potatoes, eggs and onion in a bowl, stirring carefully.
Add hot dressing.
Stir to coat all ingredients.
Serving Suggestions
Serve warm.
