12 Medium Potatoes, cooked and sliced
|

3 Eggs, hard-boiled, peeled, sliced
|
|
1 Medium Onion, sliced
|

DRESSING-
|
|
8 Slices Bacon, fried crisp, broken into bits (save drippings)
|

2 - 3 Tablespoons Flour
|
|
1 Cup Vinegar
|
|
1 Cup Water
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Dressing-
In a saucepan, stir flour into bacon drippings to make a roux.
Add vinegar, water, and sugar.
Cook until thickened.
Set aside.
|

|
Mix sliced potatoes, eggs and onion in a bowl, stirring carefully.
|
|
|
Add hot dressing.
|
|
|
Stir to coat all ingredients.
|
