     Crustless spinach quiche

Ingredients
1 T each butter and olive oil
1 cup each diced precooked ham, onion, and mushroom
10 oz frozen chopped spinach, thawed and drained
6 eggs beaten
3 cups shredded cheese (any combination of Muenster, Swiss, and Montery Jack)
1/4 cup shredded cheddar cheese for topping
1/4 t salt
1/8 t pepper
 

Instructions
Heat oven to 350 degrees. Lightly grease or spray 9 inch deep dish pie pan.
Heat butter and oil in large skillet over medium heat. Add onions and mushrooms and saute until onions are soft and mushrooms have released most of liquid. Add ham to warm for several minutes and then stir in spinach and continue cooking until excess moisture has evaporated.
in a large bowl, combine eggs, cheese, salt and pepper. Add cooked spinach mixture and gently stir to blend. Scoop into prepared pie pan. Sprinkle on shredded cheddar.
Bake in preheated oven about 35 minutes or until eggs have set and top is lightly browned. Let cool for 10 minutes before serving.
