     Currant Nut Oatmeal Scotchies

1/2 cup packed brown sugar
1/2 cup softened butter
1/2 cup milk
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
2 eggs or 4 egg whites
3 cups oats
1 cup whole wheat flour
1 cup flour
1 package butterscotch chips
1 cup currants
1 cup chopped walnuts

Heat oven to 375. Mix first 8 ingredients. Stir in oats and flours until well blended. Add chips, currants, and nuts. Drop dough by rounded teaspoonfuls, flatten a little with hand, about 2 inches apart onto lightly greased cookie sheet. Sprinkle with cinnamon and sugar. Bake until light brown about 10-12 minutes.
