     Vegan Pulled Pork

Ingredients
3 cups Jackfruit, fresh or canned
2 Tbsp extra virgin olive oil
1 onion, sliced
3 cloves garlic
2 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp chili powder
1 tsp paprika
 
1/2 tsp cayenne
1 tsp Worchestershire sauce (vegan, if desired)
1 tsp liquid smoke
2 cups vegetable stock
1/2 cup [vegan] BBQ sauce
Burger buns

Instructions
Add olive oil to the bottom of a heavy pan on medium heat. Add onion and garlic. Saute until tender. Add jackfruit. Stir and add all spices, Worchestershire and liquid smoke. Mix
Add vegetable stock and bring to a boil. Reduce heat and simmer for 45 minutes. While simmering, prepare a sheet pan with aluminum foil. Preheat oven to 350.
After simmering, spread jackfruit mixture on foil- lined pan. Roast for 1.5 hours. Add favorite BBQ sauce and stir. Return to oven for 15 minutes.
Remove from oven and serve on a roll topped with cole slaw. Trick friends into thinking they're really eating pulled pork. Enjoy!
