     Roasted Serrano Salsa

  Makes 2 1/2 cups

Ingredients
1 can fire roasted tomatoes
1 yellow onion, cut into wedges
6 garlic cloves, peeled
3 Serrano peppers, remove stem
Olive Oil
1/2 tsp salt
1 tsp cumin
1/4 cup cilantro leaves
1 TB fresh lime juice
 

Instructions
Place onion, garlic and Serrano peppers in iron skillet. Drizzle with olive oil. Cook over medium high heat until roasted.
Put tomatoes and roasted vegetable soup in food processor. If you are worried about the heat, you may want to hold out 1 pepper st this point. Add salt and cumin and blend until slightly chunky. Add cilantro and lime juice. Pulse until cilantro is chopped.
Taste and adjust the seasoning and heat to your preference.
Serving Suggestions
You can substitute 4 ;fresh tomatoes for the canned. Roast tomatoes with other veggies if you use this option.
