4 eggs
1 tsp vanilla
2 cups sugar (1 1/2 cups ok)
2 cups grated zucchini
1 tsp salt
2 cups flour
1 tsp cinnamon
2 tsp baking soda
1/4 tsp baking powder
1 small can crushed pineapple, drained
1/2 cup chopped nuts
1 cup raisins
1 cup vegetable oil

Put dry ingredients in small bowl. Stir well. In large bowl, beat eggs and sugar until fluffy; add all ingredients except nuts, pineapple and raisins. When mixed well fold in last 3 ingred. Pour into greased loaf pans. Bake at 350 for 1 hour (lg) 40 min (sm). Check with toothpick Cool on wire racks After grating the zucchini, I put it in a colander and place a plate and a couple of can on top to drain it a bit. I also make this into muffins.
