1. Using a mixer, cream butter until smooth and fluffy. Add sugar and beat until light-colored.
2. Beat in egg, egg yolk, and vanilla. Sift flour with salt and add to mixture. Mix on low speed until dough comes together. Wrap and chill for 4 hours in refrigerator.
3. Preheat oven to 400 degrees. Whisk egg white and the water in a small bowl. Set aside. Roll out dough to 1/8 inch thickness. Cut with a 3-inch round cutter, and place on ungreased baking sheet.
4. Brush with egg-white mixture, decorate each cookie with a pecan, and sprinkle with cinnamon sugar. Bake until golden brown, approximately 10 minutes.
