     Chicken Taco Chili

Ingredients
1 small onion, chopped
1 can black beans (15.5 oz), drained
1 can kidney beans (15.5 oz), drained
1 (8oz) can tomato sauce (use larger can)
10z package frozen corn kernels (~2 cups)
2 (10oz) cans diced tomatoes w/ chilles
4 oz can chopped green chili peppers, chopped
1 packet sodium reduced taco seasoning
1 tbsp cumin
 
1 tbsp chili powder
24 oz (3) boneless skinless chicken breast
homemade taco seasoning- 1.5 T cumin, 1.5 T chili powder, 1/4 t garlic powder, 1/4 t onion powder,
1/4 t dried oregano, 1/2 t paprika, 1 t salt, 1/2 t black pepper

Instructions
1. Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder, and taco seasoning in a slow cooker and mix well.
2. Nestle the chicken in to completely cover and cook on low for 8-10 hours or on high for 4-6 hours.
3. Half hour before serving remove chicken and shred. Return chicken to slow cooker and stir in.
4. Top with fresh cilantro and your favourite toppings - e.g., tex mex light cheese.
