     NY Cheesecake

Ingredients
1.75 cups Graham Cracker Crumbs (Honey Maid)
1/3 cup Melted Butter
0.25 and 1 cups sugar (not reduced)
24 oz cream cheese
1 cup sour cream
2 tsp Vanilla
3 eggs
 

Instructions
Heat oven to 350°F. Combine graham crumbs, butter, and 1/4 cup sugar - press onto bottom of 9-inch springform pan.
Beat cream cheese and remaining sugar until blended. Add sour cream and vanilla - mix well. Add one egg at a time, until blended. Pour into crust
Bake 1hr10min or until center is almost set (center will jiggle). Let cheesecake set (in over w door open ~1 hr).
Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.
