     Artisian Cake Co. Fondant

Ingredients
2 pounds powdered sugar, sifted
1 pound mini marshmallows
1.25-1.50 Wilson fondant
2T warm water
gel color
1t vanilla extract
1t almond extract
1/2 c vegetable shortening
shortening to grease bowls and utensils
 

Instructions
Grease marshmallow bowl, mixing bowl and mixing hook with shortening. This helps to keep marshmallow from sticking to bowl. Measure all ingredients so everything is ready to add. Put marshmallows in greased bowl and microwave for 90 seconds and then 30 second intervals till melted and fluffy. Add warm water and stir. I add white gel coloring at this point even though the fondant is white. Also add any color you are working with at this point. Add flavorings. Pour into mixing bowl with mixing hook. Add 1/2 c shortening and turn mixer on low. Add powdered sugar, I use a big spoon to minimize the mess, stop occasionally to scrap side of bowl. Leave a little powdered sugar left in bowl to knead fondant after mixing. When the fondant picks up 90% of the powdered sugar it is time to transfer to kneading bowl. Heat Wilton fondant for 30-40 seconds. I just use a plastic bowl and add to kneaded fondant.
Knead Wilton fondant into mixed fondant then transfer mixed fondants to counter top lightly sprinkled with powdered sugar and knead till smooth and stretchy. Fondant will still be warm. I let it cool to room temperature while cleaning up and kneaded slightly again then triple wrap in plastic wrap and put in a baggie.
