     Crispy Sweet Potato Fries

Ingredients
1/2 teaspoon chilli powder
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 teaspoon salt
2 quarts peanut oil
1 cup cornstarch
3/4 cup club soda
2 pounds sweet potatoes, peeled and cut into 1/2-1/4 inch lengths
 

Instructions
adjust oven rack to middle position and heat oven to 200 degrees. Combine chili powder, garlic powder, cayenne, and salt in a large bowl
heat oil in large Dutch oven over high heat. Whisk club soda and cornstarch in a medium bowl. Dip sweet potatoes in cornstarch mixture, allowing excess to drip back into bowl and transfer to a wire rack.
when oil is ready, fry half of the potatoes about 6-8 mins. drain fries and toss with seasonings.
