     Black Bean Salad

Ingredients
3 cups of cooked rice at room temperature, 1 cup raw
16 oz. can of black beans, drained and rinsed
1 medium red pepper, minced
1 medium green pepper, minced
4, green onions, minced
1/4 cup of cilantro, minced
1/2 cup olive oil
1/4 cup lime juice
Salt and Pepper to taste
 
Garnish with slices of avocados and mangos

Instructions
Mix first 5 ingredients. Whisk oil, lime juice and cilantro and pour over rice mixture. Refrigerate for several hours or overnight. Garnish with slices of avocados and mangos.
I like mangos so I often will chop some and add them to the rice mixture too. I will often use red, yellow or orange bell peppers to make the salad more colorful instead of the green bell pepper. I also use Jasmine rice if I have it.
Serving Suggestions
This is a great salad for a luncheon or potluck.
