1 avocado, pitted, peeled and diced (reserve 1/4 cup for garnish)

1/4 cup coarsely chopped fresh cilantro, save sprigs for garnish

1 cup nonfat plain yogurt

1 cup cold water

1 tsp. coarse slat

1/4 tsp freshly ground pepper

Instructions |

|
Puree ingredients in a blender. Divide soup and reserved cucumber and avocado into 4 bowls. Cover with plastic wrap, chill for 30 minutes. Garnish.
