     Company Spaghetti Casserole

1 lb turkey sausage (can use ground beef)
1 28 oz can petite diced tomatoes
1 24 oz jar of favorite red pasta sauce
8 oz. package cream cheese
3 cups small curd cottage cheese
2 cups sour cream
1/2 cup diced green pepper
1/3 cup diced green onion
2 small cans of mushrooms drained (optional)
1 Lb spaghetti noodles.
2 cups grated cheese ( I like to mix mozzarella and cheddar)

Heat oven to 350 degrees. Spray 9x13 caserole dish Brown sausage and drain. Add spaghetti sauce and tomatoes and simmer. Pour a little bit of sauce in the bottom of baking dish. Cook noodles in salted water then drain and put 1/2 in bottom of dish. Cream the cottage cheese, sour cream and cream cheese together. Add mushrooms, onion and green pepper. Spread 1/2 cheese mixture over noodles then spread 1/2 of sauce mixture over cheese. Repeat with remaining noodles, cheese mixture and sauce. Cover with foil Bake for 40 min. then uncover add cheese and bake until melted and heated through. Easy to double.
