     Chicken/grilled Pineapple Mango Salsa

Ingredients
1 lb chicken breasts pounded into equal thickness
1 lime, zested and juiced
3 TB white vinegar
1 TB olive oil
1 glove garlic
1/2 tea ground cumin
salt and pepper to taste
Salsa
 
1 ripe mango, flesth cut from pit in large flat slices
1 small fresh pineapple, cut into rings and peeled
1/4 cup dices red onion
juice of 1/2 lime
1 jalapeno, seeded and minced
1/4 cup cilantro leaves, chopped
1/4 tea chili powder
salt and pepper

Instructions
Combine ingredients for the tequila lime chicken marinade and whisk together. Put chicken breasts in gallon size freezer bag and pour the marinade over them. Press air out of bag, seal and massage into chicken. Let the chicken marinate for at least 30 minutes or up to an hour.
Preheat grill to medium-high heat and brush or spray the grates with oil. Place the chicken on the grill at the same time you grill the pineapple and mango. Grill chicken about 4-8 min depending on the thickness, then flip and grill for another 4-8 minutes or until cooked all the way through
Grilled Salsa Preheat grill to medium-high and brush or spray with oil. Brush the slices of pineapple and mango with oil to prevent sticking. Place on grill (flesh side down for mango. Grill pineapple for about 3-5 minutes per side and mango about 3 minutes or until nice grill marks form. Remove fruit and cool until you can handle. Cut mango into slices and remove the skin and cut into small chucks, cut pineapple into small chucks. Place all ingredients for salsa into serving bowl and toss. Serve on top or along side chicken
