Peel, slice, and dice the apples as thinly as possible.Add to the apples the dark brown sugar, flour, cinnamon and salt. Mix well by hand.
Cover the bowl tightly with plastic wrap and chill in refrigerator while you make your pie crust.
Smooth the dough into the pie plate and trim any excess with a sharp knife. Fill the crust with the apple pie filling. and dot with 2 tbsps butter. Cover the pie with the second crust, tightly crimp the edges and cut slits with a sharp knife to allow the steam to escape while baking.
Beat together egg and milk and brush the egg wash over the surface of the pie for a golden finish.
Bake it in a 400 F oven for 50 minutes
