     Creamed Asparagus

Servings   1/2 lb asparagus

Ingredients
1/2 lb. asparagus, trimmed cut into 1-2" pieces
2 T. unsalted butter
2 T. all-purpose flour
1 cup whole milk
1/2 cup chicken broth
2 T. chopped fresh dill
Fresh lemon juice(add to taste)
minced lemon zest(add to taste)
salt(add to tasted)
 
and white pepper(add to taste)

Instructions
Blanch asparagus in boiling water until tender(3-4min) then transfer to a bowl of ice water to stop the cooking.
Melt butter in a saucepan and whisk in flour and cook for one minute. Then add the milk and broth, increase the heat to high(boil) while whisking the mixture.
Take pan off the heat and add the dill,lemon juice, zest, and seasonings. Then put asparagus in pan and toss it all together.
Serving Suggestions
makes 1/2 lb asparagus
