cut each chicken into 8 pieces as directed on pages 10-11. trim off any excess fat. in a sturdy paper bag, combine the flour,salt to taste,paprika, thyme and sage; shake well to blend thoroughly. add the chicken pieces to the bag, 3 or 4 at time, and shake to coat.shake off the excess and set aside. pour the oil into a deep, heavy saucepan to a depth of 1 1/2 inches (4cm). place over medium heat until the oil is very hot(350f/180c). when the oil is ready, slip 3 of the chincken peices into the pan. do not corwd the pan or the chicken will not brown evenly. cook over medium-high heat, turning to brown on all sides, until golden brown, about 3 minutes. reduce the heat to low and cook through, 4-5 mintues. transfer to paper towels to drain. place the chicken in a warm oven. repeat with the remaining chicken pieces.
