1 cup of frozen mixed vegetable (peas, carrots, asparagus, broccoli etc.)
1 tablespoon soy sauce
1 teasoon sesame oil
1 tablesppon Sriracha (optional)
Red pepper flakes
Heat 1 teaspoon cooking oil in a large heavy skillet over high heat. Add egg and cook, without stirring, until fully cooked on one side, about 30 seconds. Flip and cook until just cooked through, about 15 seconds. Transfer to a cutting board and cut into ½-inch pieces.
Add garlic to the pan along with red pepper flakes; cook, stirring. Add chicken and cook. Add frozen veggies; cook, stirring, until just tender, 2 to 4 minutes. Transfer everything to a large plate.
Add cooking oil to the pan; add cauliflower rice and stir until beginning to soften, about 2 minutes.
Return the chicken mixture and eggs to the pan; add or soy sauce, sriracha, sesame oil and sriracha - if using. Stir until well combined.
note- if your pan is large enough this can all be done in one pan without removing ingredients.
