     Mushroom risotto (2people)

180g risotto rise
600-700 chicken/vegetables soup
150g Champignon Mushrooms
150g Portobello Mushrooms
100g onion
75g butter
50g parmesano cheese
100ml white wine
2 garlic

Prepare the chicken/vegetables soup. Cut the mushrooms. Cut the garlic and put it in a pan with oil. Then add the mushrooms, a little of salt and pepper. Cook on medium heat until they are cooked.
Peel the onion and cut it. In another pan, put butter and 2 spoons of olive oil. when it is hot, add the onion and a little of salt. (Leave it 25- 20min).
Add the risotto and mix it during 2 min. Then add the white wine and wait until it is evaporated. Then add the mushrooms.
Finally, add 2 cups of soup (have to be very hot). Cook on medium heat until it is evaporated and mix it every time. Add 1 cup every time following the same process. After 28-20 minutes from the first time, taste the rise and if ti is needed, add more cups. When it is cooked, add the cheese and a little of butter if you want. Enjoy!!
